Baked Potato Chips with Lemon Dill Aioli
- 6 russet potatoes
- oil (olive or canola work)
- dried herbs of your choice (I used garlic powder, dried oregano, dried dill, and chili powder)
Preheat your oven to 400degrees. Wash and slice the potatoes. After they are all sliced, place them into a bowl with cold water and let sit for 10 minutes. After 10 minutes, remove the potatoes and dry with paper towels. Once the potatoes are very dry, lay them out on an oiled baking sheet, or a rack on your baking sheet. Lightly oil the potatoes and then flavor them with spices of your choice. Let bake for about 30 minutes, or until they start to brown. Remove from baking sheet and place onto parchment paper. Now salt the chips and let sit for 5 minutes to continue getting crispy.
